Product detailed description
A small group of farmers in the Tolima region. They operate around the village of Montalvo at an altitude of around 1700 – 2000 m, and each owns approximately 4 – 5 hectares of land. They have been working closely together for several years, processing cherries at their central processing mill, 'Especiales Tres Esquinas'.
This specific batch was fermented for 75 hours in hermetic tanks, which gives this coffee characteristic highly sweet fruity notes. The cherries were dried for 8 days on raised beds plus 2 days on tarpaulins and then another 4 days in a mechanical dryer at a temperature of around 45 degrees.
