Product detailed description
The El Diviso farm is located near the town of Pitalito in the southwestern part of Colombia, specifically in the Huila region. This area lies at an altitude of between 1,750 and 1,800 metres, which provides ideal conditions for growing specialty coffees. The farm is managed by Nestor Lasso, a third-generation coffee grower who continues the legacy of his grandfather José Uribe, the founder of the farm.
Nestor Lasso, along with his brother Adrian and neighbour Jhoan Vergara from the Las Flores farm, are experimenting with different coffee processing methods to achieve higher quality and unique flavour profiles.
The Sidra variety, also known as Bourbon Sidra, is a hybrid of the Bourbon and Typica varieties. This variety was originally bred in Ecuador and combines the sweetness and body of Bourbon with the bright acidity of Typica. Sidra is prized for its complexity and balance of flavours, making it sought after among coffee lovers.
On the El Diviso farm, the Sidra variety is grown in the shade of native and fruit trees, which promotes slower ripening of the cherries and contributes to a richer flavour profile.
In terms of processing, Nestor Lasso uses various methods including washed, semi-washed and natural. For the washed method, only ripe cherries are carefully selected, which are then fermented and dried under controlled conditions to achieve the desired flavour profile.
Bourbon Sidra coffee from the El Diviso farm is known for its distinct aromatic intensity with notes of passion fruit, guava and chocolate, complemented by high sweetness and balanced acidity. This combination makes this coffee exceptional and sought after among connoisseurs
